    The previous posters were half way there.

    It is in fact a ‘Zester’ and can be used for the majority of citrus fruits not exclusively lemons. I will admit predominately it used for lemons, but it also works on limes and oranges.

    Ah, good question. Is it to peel the rind in strips?

    The channel is used to removed strips from the citrus.
