Egg fried rice

Doing this one for brekky, cooked the rice last evening:

Note the separate fourth egg later over the rice. Must have a leafy green through it, red pepper also in tiny squares, ditto the onion, not julienned this will be eaten with spoon and fork.

I can’t eat much egg for some reason, so this will be it for a week.

    That looks scrumptious James. Will try that myself this week and report back. What sort of oil do you suggest?

      Now there’s a thought! Some bits of smoked salmon mixed thru it might be good.

      Have done it with bacon bits in the past.
